One of Chef Khanh’s favourite sauces that his mother made whilst he was growing up in Sydney. Khanh eventually learnt to perfect this whilst working as Sous Chef at powerhouse Cantonese restaurant, Mr Wong, putting his own spin on this version.
This is a complex salted black bean sauce of slow-cooked onion, garlic, ginger and chilli, seasoned with soy sauce, oyster sauce and a ginger & galangal oil. A versatile sauce, it is perfect with almost everything, from dressing meat and seafood dishes to stir fries.
Nut free. Contains shellfish, wheat, dairy and soy products.
